Coconut Corn Meal Pancakes
In this week's Surfin', I mentioned that I like coconut corn meal pancakes.Ken Rudder, WA4JJW, wrote asking for the recipe, so here it is:
Coconut Corn Meal Pancakes
Ingredients:
1 cup all-purpose flour
1 cup cornmeal
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon sugar
1 egg, lightly beaten
3/4 cup milk
3/4 cup water
1/2-1 teaspoon coconut extract
1 tablespoon melted butter
1 cup grated coconut
Directions:
1. Sift the dry ingredients together in a large bowl.
2. Whisk the egg with the milk and water in another bowl.
3. Pour the egg mixture in with the dry and stir until blended.
4. Add the melted butter and coconut extract.
5. Stir in the grated coconut.
6. Cook on a hot griddle.
